Tonight's Dinner.....
Consisted of a large plate of romaine lettuce and mesculun mix topped with a dressing made from hummus, Lutenica (a delicious relish by a company called Zergut made from roasted red peppers that I stumbled on a local mid-eastern market), soy milk, apple cider vinegar, fresh parsley, fresh dill, coarse pepper and baby carrots, and sprinkled with sunflower seeds. We also had a veggie plate of cubed butternut squash tossed with a little water, turmeric, fresh parsley and ground pepper, steamed in the microwave, steamed collards, kale & swiss chard, and a steamed head of cauliflower with left over "Macaroni Hates Cheese" sauce (see Monday July 24th, 2006) to dip.
