Chickpeas in Zucchini Garlic Sauce over Cauliflower Red Rice


1 1/2 cup dry chickpeas (aka garbanzo beans)
5 cups water
1 1/2 tsp. garlic granules
2 1/2 tsp. herbes de provence
4 small zucchini, finely chopped in food processor
1 tbsp olive oil

Add all ingredients to a small crockpot and cook on high for for hours, or low for 6 to 8 hours, or to desired consistency. Serve over Cauliflower Red Rice.


Cauliflower Red Rice:

5 cups cooked red cargo rice
1 head cauliflower
1 tbsp olive oil

Finely process cauliflower. Add to previously cooked red rice and cook, covered, in the microwave for about 8-10 minutes.

Rice Pilaf


In a hurry to use up some fresh veggies, I was surprised at how yummy this simple dish turned out. To 2 cups of raw long grain brown rice I added 4 cups of water to which 2 tbsp. of Taki's Ginger Miso (Taki's is a local "Healthy Japanese Fast Food" restaurant that markets their Miso via health food markets, any of our favorite miso would do). I then aded 2 heads of finely processed broccoli florets, 8 oz. of sliced mushrooms, and one chopped red bell pepper. Covered my bowl with a plate and nuked on high for about 8 minutes, followed by 17 minutes at medium. Let sit for 10 minutes, fluff with a fork and serve!

Burritos

Sweet Potatoes & Kidney Beans, Roasted Veggies (cauliflower, zucchini, yellow squash & Purple Onion), Salsa Verde and raw shredded kale on multi-grain tortillas made up these freezer-friendly, quick meal treats...

Spaghetti & Falafel Balls



I've been busy lately....Found some pics of meals I never added, and unfortunately now the "recipes" have eluded me... This sauce featured cinnamon, as I recall...Served over linguine, topped with raw red bell pepper rings and black olives.....Falafel balls, baked from a boxed mix, completed the meal....

Lentils & Rice


I still haven't done any major grocery shopping, and have been eating simply and/or on the go... Tonight I decided to put on a pot of lentils... I used about 3 ups dry brown lentils, water to over plus a few inhes. Added a large chopped onion, a piece of peeled ginger about the size of a big thumb, a sprinkling of crushed red peppers, and a couple bayleaves. I watched them carefully to make sure they didn't boil dry... Then I added the following veggies, all finely food processed (I know, I pulsated the tar out of everything, lol)- 4 carrots, a bunch of collard greens, half a bunch kale, and one head of broccoli. I also added a can of diced tomatoes, some garlic granules and a tbsp or so of garam masala.... Left to simmer for a bit and served over basmati rice...Very nourishing, and enjoyed by all ourlittlest animal friends too!

For desert we had a slice of Wild Oats Market's Down Home Vegan Chocolate Cake.... It is sooooooooooooooooooooooooooooooooooo good! I HIGHLY recommend!
